Summer 2015: All About the Snacks

Happy Fri-YAY everybody! End of the week, now it's time to lay out by the pool and enjoy the summer heat. 

Today I'm bringing you some of my favorite summer snacks. They're easy to throw together so you don't miss out on any summer fun and SO delicious you'll be snackin' all summer long! Enjoy!!!

Since everyone's obsessed with avocados these days I thought I'd whip up a little something to celebrate the oh-so-amazing avocado. Only four ingredients and minimal prep time.


2 slices of toast (a more hearty bread tastes wonderful with this snack!)
1 small avocado
1/2 small tomato
Parmesan cheese

Simply spread the avocado on your toast and top with diced tomatoes and grated Parmesan cheese! It is sooooooo good! And truth be told this is my current favorite breakfast, weird? It's yummy and keeps me full for a pretty long time.



I feel like cucumbers are a really underrated vegetable. There's actually so much you can make with them! And for summer they are perfect because they'll help cool you down. 


1/2 (or whole) cucumber
Olive oil
Red wine (or Balsamic) vinegar
Garlic powder
Salt
Pepper

Chop up your cucumber into cubes, drizzle on the oil and vinegar, sprinkle with the garlic powder, salt and pepper. Pop these in the fridge for 30 min and enjoy a cool and refreshing snack! These are a great replacement for when you're craving chips. They satisfy that crunch and salty craving.


It's summer...berries are a must! I love adding things to my berries to make them a little more exciting. As you can see by my almost empty bag, my current fave addition is granola.


5-8 Strawberries
1/4 cup granola
Honey

Chop up your strawberries, add your granola and toss with honey. Amazing for a light breakfast or an afternoon snack and a great substitute for dessert!
