Fresh Edamame Salad

Sometimes side dishes get a bad wrap for being "boring". And even though they may not be the star of the meal that doesn't mean they have to be! Why not stray away from the last minute chips and salsa and bring something fun and fresh to your next gathering?

My new fav is this delicious Edamame Salad. It's simple, healthy and super tasty! And if you're into trying new things this might be the dish for you!

What you'll need:

2 cups wheat berries (any you prefer will do, here I used spelt berries)
1 can chick peas (you can also sub in black beans, pinto beans etc.)
2 cups frozen and thawed Edamame (make sure you get the kind already out of the pod)
1 small tomato chopped
1 small red or yellow onion chopped
2 Tbs red wine vinegar
3 Tbs extra virgin olive oil
Salt and pepper

First, cook the spelt berries. Just follow the directions on the package. Usually they take about an hour in boiling water.

While that's cooking, mix together your vinaigrette. I had this handy little dressing mixer but a simple whisk will still do the trick.

Once your spelt berries are all cooked and have fluffed up like so, drain them under some cold water to help them cool quickly.

Add the rest of your ingredients and give them a stir.

Add some salt and pepper to taste and that's it! Boom! You have a fresh, healthy, tasty salad that everyone will want the recipe for! You can serve it right away for chill for up to 8 hours.
