Quinoa is pronounced keen-wah....

If I said it once, I’ve said it a thousand times, I’m definitely not the chef of this blog! Thankfully I still live at home and my mom LOVES cooking (thanks Kris you’re the bomb)! However, every once in a while I see something on pinterest that sparks my interest and as long as it doesn’t involve touching raw meat, I’ll try it.

This week, I stumbled across Broccoli Cheddar Quinoa bites. Hmmmm, that sounds a lot like my favorite soup from Panera, so I thought I’d try it out. I have to tell you, I’m not completely sold but stay tuned and I’ll tell you why…

Broccoli (2 cups chopped)
Garlic (I used 2 cloves)
Paprika (1/2 tsp)
Eggs (2)
Cheddar Cheese (1 1/2 cups)

1- prepare quinoa as instructed on the bag. When it’s done let it sit for a bit and fluff up
2- mix broccoli, cheese, garlic, paprika and eggs in a large bowl
3- combine quinoa into the bowl
4- spoon about 3 tablespoons into the muffin tin (make sure to pack it in there so they stay together)
5- put in the oven for about 18 minutes at 350
6- take it out and let cool 

Alright, now let me tell you this didn’t go quiiiiiite as planned. The recipe I looked at called for onion, so I used some and that’s definitely all I tasted. I also didn’t pack it in to the muffin tin so mine kind of came apart. Next time I make this I’m going to use a little more cheese too! They weren’t terrible but anything I make that’s at least edible is a win in my book!!

Even though these weren’t a homerun, it definitely inspired me to try more things. For the time being, I’m still staying away from anything with meat (I’m not a vegetarian, I just really hate the idea of touching raw meat…) but I’m definitely going to make an effort to be a little more adventurous with my food! Quinoa looks like it’s going to be making its way into my dinner a little bit more!
