All About Those Kicks

Haaaaaaaappy FRIDAY everyone! TGIF amiright?!?! This week's fashion Friday is all about the kicks. I've been on the hunt for a great pair of white sneakers for months now! And finally found the perfect pair at the one and only...Loft!

(Online looks like they only have grey, blue and mint green. I got my white ones in the store.) 

I am a firm believer that these puppies can be dressed up or down. Jeans and a tee? Sure. Cute flirty dress? Why not!

Currently (done) Watching: Don't Trust the B

Can we just have a moment for all the shows that were cancelled way too soon?! I don’t understand how there are some shows that are 10 seasons long and are so over done yet there are some QUALITY shows that were cancelled after 2 seasons!!

Currently mourning over Don’t Trust the B in Apt 23. I recently binged all TWO seasons on Netflix and I will not forgive whoever cancelled it!! Let me just tell you, this show is perfect in so many different ways.

First off, JAMES VAN DER BEEK is in it. Annnnnd he plays himself. Which means that there are several references to my all time favorite show, Dawson’s Creek. He pretty much makes fun of himself, talks about a Dawson’s reunion, and recites the infamous monologue professing his love to Joey. PERFECT!!

If that’s not enough to convince you, I don’t know what’s wrong with you! Just kidding, but really. The show is just such a fun, insane, real, craziest half hour (aka 7 hours) you’ll watch. It’s about a girl, June, who moves to NYC to live out her dream and moves in with the most insane chick ever Chloe, played by Krysten Ritter (who is phenom). Their friendship goes through several ups and downs, June is the typical goody two shoes and Chloe is the ultimate party girl, so you can imagine the stuff that goes down.

Besides the three main characters, there are so many other QUALITY characters. Eli is their neighbor who you mainly only see from the waist up and is always spying on June and Chloe.  Luther is James’ assistant and is just fabulous in every way imaginable. Robin is Chloe’s former roommate who is obsessed with her. Mark is June’s boss at a coffee shop called “it’s just beans.” And there’s a quick appearance from Mark Paul Gosselaar and Busy Philipps.

If you’re looking for a great show to watch on Netflix, I HIGHLY recommend Don’t Trust the B. However, be prepared to be sad about how quick it’s over.

It's my party and there will be no crying allowed!!

HAPPY FRIDAY!! As you are reading this, I’m currently in New Jersey celebrating my 25th birthday!! Insert all the party emojis here. What better way to celebrate my birthday than with a Fashion Friday: birthday edition! Enjoy!

I am one of those people who love my birthday. Actually, I kind of treat my birthday like most people treat NYE. I usually write out a list of goals I want to accomplish this year, a fresh start to have my best year. Last year my list included things like start a blog (YES HI, ACCOMPLISHED THIS ONE) and read 24 books (definitely think I only read five, whoooooops) I can’t wait to make one for this year, and hopefully accomplish more than just a few on the list.

These balloons were the WORST to photograph. I had all these cute ideas but these balloons definitely were not having it. Maybe one day I’ll share with you all the other pictures that are not the most flattering but were SO FUNNY!

Easy Cake Truffles

So, I've seen a lot of Pinterest recipes for cake balls and Oreo truffles and absolutely LOVE all the ones I have tried so far. However, I don't always have all the ingredients on hand. So I thought to myself, why not take a look around the kitchen and see if we can improvise.

And since my mother went a little crazy at Publix with the BOGO deals, we ended up having 3 Spice Cake mixes in our pantry. I was nice enough (and bored enough) to try and experiment with the Spice Cake mix and try out my own cake truffles. They turned out to be quite yummy and super easy to make!

Here's what you need:

Any boxed cake mix (I happened to have Spice Cake)
8oz Cream Cheese
Chocolate to melt (can be any flavor you think will pair well with the cake mix. I chose white chocolate and butterscotch chips)

Prepare the cake mix just as you normally would, following the directions on the box (this may call for additional ingredients). I chose to bake it in a very thin pan to have it bake quicker which was very helpful!

After the cake is cooled a bit, combine 1/2 of the cake and the 8 oz of cream cheese. This part gets messy because the best way to mix these two is with your hands. Yum!

Next, prep a place for your truffles to chill. I put a cooling rack on a cookie sheet with some wax paper to ease the clean up process.

Form the cake and cream cheese combo into 1-2 inch balls and place on your cooling rack.

(I promise those aren't meatballs...)

Melt the chocolate however you choose. Could be a double-boiler which will keep the chocolate at a good temp. I cheat and melt it in the microwave with some Crisco, easy peasy.

I do 30-second intervals in the microwave, stirring in between until it's smooth and liquid-y enough to spoon over the truffles.

Spoon the melted chocolate over the truffles until completely covered.

Chill overnight.

And I added some sugar crystals on top just for some fun.

Ok, ok so they're not as pretty as I thought they would turn out. But trust me they taste delicious!

You can enjoy them for dessert the next night! Or if you're like me and have no self control...for breakfast!

What the duck, auto-correct?!

Listen, although it makes life hella will forever be on my shit list. 

Evidence that auto-correct plagues my personal life:

You know, Park Abe...where the cool kids hang out.

Even on your off-days auto-correct will always be there to make it worse.

But true friends bear with you while auto-correct causes you to struggle through life.

And sometimes... you just can't.

Just Checking In

Hey you guys! It's Porter just checking in to see how everyone's New Year's resolutions are going. Still hitting the gym hard? Anyone try juicing like I did the other day? It was surprisingly delicious despite the abundance of veggies.

Anyways... here's where I'm at with my 15 in 2015. If you're just tuning in now no worries check out that post here to see what the heck I'm talking about!

And it looks like so far so good! January 15th and 8 miles down! Only 7 to go! And I can already count on crossing off 3 of those miles since I actually signed up for a 5k at the end of the month! If you're in the Central Florida area check it out! It's the Florida Hospital Women's 5k through Track Shack!

Quinoa is pronounced keen-wah....

If I said it once, I’ve said it a thousand times, I’m definitely not the chef of this blog! Thankfully I still live at home and my mom LOVES cooking (thanks Kris you’re the bomb)! However, every once in a while I see something on pinterest that sparks my interest and as long as it doesn’t involve touching raw meat, I’ll try it.

This week, I stumbled across Broccoli Cheddar Quinoa bites. Hmmmm, that sounds a lot like my favorite soup from Panera, so I thought I’d try it out. I have to tell you, I’m not completely sold but stay tuned and I’ll tell you why…

Broccoli (2 cups chopped)
Garlic (I used 2 cloves)
Paprika (1/2 tsp)
Eggs (2)
Cheddar Cheese (1 1/2 cups)

1- prepare quinoa as instructed on the bag. When it’s done let it sit for a bit and fluff up
2- mix broccoli, cheese, garlic, paprika and eggs in a large bowl
3- combine quinoa into the bowl
4- spoon about 3 tablespoons into the muffin tin (make sure to pack it in there so they stay together)
5- put in the oven for about 18 minutes at 350
6- take it out and let cool 

Alright, now let me tell you this didn’t go quiiiiiite as planned. The recipe I looked at called for onion, so I used some and that’s definitely all I tasted. I also didn’t pack it in to the muffin tin so mine kind of came apart. Next time I make this I’m going to use a little more cheese too! They weren’t terrible but anything I make that’s at least edible is a win in my book!!

Even though these weren’t a homerun, it definitely inspired me to try more things. For the time being, I’m still staying away from anything with meat (I’m not a vegetarian, I just really hate the idea of touching raw meat…) but I’m definitely going to make an effort to be a little more adventurous with my food! Quinoa looks like it’s going to be making its way into my dinner a little bit more!
