I love any recipe that uses bread and cheese. Sometimes all I need is the bread and cheese! But let's be honest, that's not always the healthiest choice. So when I get to make something yummy, healthy and add some of my favorite ingredients sign me up!
These Crispy Zucchini Bites are my go-to appetizer/side dish. Not only are they delicious but SO easy to make!
You will need:
1 large uncooked zucchini
1 cup bread crumbs (I used Panko bread crumbs)
1/2 cup Parmesan cheese
1 Tbsp. Italian herbs (you can use any combination you like. Thyme and Basil are great. So is any of those packets of pizza seasoning you might having lying around. I used Herbes de Provence which was really good.)
Salt & Pepper to taste
Before you start preheat your oven to 425 degrees.
First thing, chop your zucchini into small bite-sized circles. If you grabbed your zucchini out of the fridge it might be a little damp so just set your bites onto a paper towel so they can dry out a bit.
Then beat the egg in a small bowl, this is what you'll use to get the cheese/bread crumbs/herbs to stick to your zucchini.
Mix together the Panko (or any bread crumbs you're using), Parmesan cheese, and herbs.
Dip the zucchini one piece at a time (doing multiple pieces tends to get the bread crumb mixture really lumpy) into the egg first, then evenly coat the piece with the bread crumb mixture.
Place the bites onto a baking sheet and bake at 425 for 12-15 minutes or until they are crisp and golden brown.
I added a dash of salt and pepper then moved them to a serving plate.
And dig in!
These are a great party appetizer or side dish to just about anything. I'm still working on some kind of yummy dip that would pair nicely with the zucchini bites so let me know if you have any ideas!
